The process of creating Pickering & Griffin sea salt begins by evaporating pristine Gulf of Maine seawater to 60 percent moisture in wide pans over a hardwood fire. The reduced seawater is then placed in shallow pools inside ventilated solar heated shelters, where all the water is evaporated, leaving behind coarse salt crystals. Salt is continuously harvested in the evaporation shelters as new seawater is added through the summer and autumn months. Similar salt making techniques have been employed for 5,000 years.
